Ingredients
325 gramsof warm water(110-115 degrees F)
5 grams dry active yeast
500 grams "00" Pizza Flour
10 grams Kosher salt
Steps
Put 325 grams of warm water (110-115 degrees) into a mixing bowl and add 5 grams of yeast. Let sit for 5 minutes to allow the yeast to settle in. Next, add 500 grams of "00" pizza flour to the mixing bowl and then top it off with 10 grams of kosher salt. It is important to add the salt on top of the flour to prevent it from hurting the yeast while it is activating. Set the mixer to the 2nd speed and mix the ingredients for about 10 minutes. Once mixed, transfer to a greased bowl. Cover with plastic wrap or a towel and leave at room temperature until dough doubles in size (usually about 1.5-2 hours).
