Paddy's Smoked Pie

Paddy's Smoked Pie

Ingredients

Equipment

  • Pellet Smoker (We use a Green Mountain Grill)

  • Electric stand mixer with a dough hook (We use a Kitchenaid Stand Mixer)

Dough

  • If you prefer the quicker method, store bought premade dough will work just fine! 

Sauce

  • 1 can (28 oz) San Marzano Tomatoes

  • 1 large garlic clove

  • 1 tbsp Italian seasoning

  • 1 tbsp extra virgin olive oil

Toppings

  • Fresh mozzarella roll

  • Fresh basil leaves

  • Shredded Italian cheeses

Steps

Sauce (can be made while dough rises) - In a blender, add 28 oz of San Marzano tomatoes, 1 large garlic clove, 1 tbsp Italian seasoning, and 1 tbsp extra virgin olive oil. Blend for a couple minutes until smooth. Pour into enamel coated dutch oven or large non-stick pot and let simmer for 5-10 minutes. 


Setup the Smoker - Set the smoker to 400 degrees F. 


Pizza - On a floured surface, begin stretching dough into a 12" pizza circle. Transfer to a floured pizza peel and spread your pizza sauce over the dough. Top with Italian cheese, basil, and mozzarella slices. Brush the edge of the crust with extra virgin olive oil. Once prepped, move onto smoker (set at 400 degrees F) and cook for about 15 minutes until bottom is sturdy and cheese is melted to preference. Pull once cooked and cut.
